That one course we hated when we were young, nowadays is a perfect option for bad weather days.
The vegetables will vary according to season and the region where you are: the most used ingredients are generally onions, beans, tomato, potatoes, celery and carrots. Moreover, celery, carrot and onion are the three ingredients used to make broth, used to dilute the minestrone during the cooking. In some variations you can add pesto or parmesan, to flavour the recipe.
